pimentos??
So this week's local food was a quick meal. (altho to be honest, my favorite meals are quick meals)
Sue and I had a tomato/mozarella/basil salad (olive oil not local) and a quick egg omelet with mushrooms. While I was making my quick fix, I was slow roasting some pimento peppers from our CSA.
These went into 2 freezer baggies and are safely frozen now in my fridge. I have some regular bell peppers I plan on roasting and putting up in oil. But These babies were ready to go before I left on vacation. The smell of raosted peppers in my hous was FANTASTIC!!
