I haven't been posting all my local summer dinners. I feel bad about that. I plan on doing it every week but I just never remember to take a foto. So this week I made sure I ran up and got my camera before we demolished it.
This past week was a fiber nite so I made 2 local summer dishes for them. Both are from Madison's Vegetarian Cooking for Everyone. It is one of my goto cookbooks for summer. Almost every vegetable under the sun is in there.
I made peas with onions and sage, and zucchini with onions and tomatoes. I don't follow her recipes exactly. I mean the zucchinis were supposed to be cut into fans and tomato slices wedged between them. Instead I cut the zukes into strips and put some of my canned tomoatoes on top. The only thing not local were the olives in the zukes and oil and salt in both dishes.
I would serve the zukes over pasta next time.. or rice. The peas were just plain delish.
